Inc. Key Lime Koconut Chiffon
Pie Ingredients: 4 egg whites 1 cup heavy whipping cream (if desired) Crust: Toast the coconut at 350º for ten minutes. Cool. Mix with vanilla wafer cookies. Use butter to generously coat the bottom and sides of a 9 inch pie plate. Sprinkle with the toasted coconut/ cookie mix and press firmly. Filling: Thoroughly mix gelatin, 2/3 cup sugar and salt in sauce pan. Beat together egg yolks, orange and lime juice and water; Stir into gelatin mixture. Cook and stir over medium heat just until boiling. Remove from heat; stir in peels. Chill, stirring occasionally, till mixture mounds slightly Beat egg whites till soft peaks form. Gradually add 1/3 cup sugar, beating to stiff peaks; fold in gelatin mixture. Pile into the coconut pastry shell. Chill until firm. Trim with whipped cream, a few grains of lime and orange peels and thin lime slices. Be sure to print extra copies of this page, because everyone will ask you for the recipe! |
